Taco Bell has had a lot of different “Chicken” recipes over the years. Some were better than others. The latest and greatest, some would say, is the Cantina Chicken. It’s really good. It’s juicy and flavorful. They have a bunch of great menu items featuring it and it’s a huge hit with their customers. If you love it and want to make it at home I have great news. It couldn’t be much easier to make. If you are looking for the Avocado Verde Sauce recipe or the Avocado Ranch sauce, I have those too. Now you just need some tortillas and purple cabbage and it’s a Cantina Chicken Party right there in your own kitchen!

Taco Bell’s Cantina Chicken Recipe

If you are trying to recreate the Cantina Chicken in Taco Bell's Cantina Chicken Menu, this is it! Good news, it's really easy to make.
Prep Time 15 minutes
Cook Time 55 minutes
Total Time 1 hour 10 minutes

Ingredients
  

  • 1 Chicken breast
  • 1/2 tsp Chili Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Achiote Paste
  • 3/4 cup Chicken Stock Enough to cover a little over half of the chicken in its baking dish.

Instructions
 

  • Preheat oven to 375f or 190C
  • Mix all the spices together in a bowl
  • Wash and pat dry one whole chicken breast
  • Coat the chicken with the spicy mixture
  • Place the chicken in a baking dish just big enough to fit the chicken. A bread loaf pan works great.
  • Add just enough chicken stock to cover the chicken a little over halfway. About 3/4 cup
  • Baking in the oven about 45 minutes or until the chicken reaches an internal temp of 165F
  • Remove from oven and let cool for 20 minutes in the juices
  • Move the chicken to a cutting board and pour the juices into a 2 or 3 quart saucepan. Heat the pan to medium low heat
  • Chop the chicken into small piece. About 3/8 inch (10mm)
  • Add the chicken to the saucepan and stir well. Cover and heat it for about 10 minutes, stirring occasionally.
