Taco Bell Enchirito

The Taco Bell Enchirito in a very simply recipe. It is basically a combo burrito served enchilada style. It's easy to make at home and super fun to relive the memories of a better time. A time when Taco Bell wasn't so expensive and actually had good food!

Ingredients
  

  • ¼ lb Seasoned Ground Beef
  • ¼ lb Refried Beans
  • ¼ cup Red Enchilada Sauce
  • ¼ lb Shredded Cheddar Cheese
  • ¼ cup Diced White Onion
  • 4 Hybrid or Flour Soft Taco Size Tortillas

Instructions
 

  • Place slightly warmed tortilla in your dish of choice (Au Gratin dish works great)
  • Add a smear of Refried beans to the center of the tortilla, about 1/4 of your beans
  • Add a scoop of Seasoned Ground Beef on top of the beans, about 1/4 of your meat
  • Add some diced white onions on top of the meat
  • Add a small amount of cheddar cheese on top of the onions
  • Add a small amount of red enchilada sauce on top of the cheese. Just enough to cover it with a stripe
  • Roll your tortilla tightly and place seam side down.
  • Cover the top of your enchirito with enough sauce to completely cover it and run down the sides to pool up a bit
  • Add Cheddar Cheese on top of the enchilada sauce to cover it and the pool of sauce on the side.
  • Heat the enchirito in the microwave for about 1min20sec to melt the cheese. You can also use your oven broiler or toaster oven to melt the cheese. Be careful, the dish will get very hot!
  • Eat and enjoy. Make funny noises and dance around like your are the coolest person on earth! You are! You just made a freakin' ENCHIRITO!
